Lump crab cake over a smoked Gouda grit cake topped with Cajun bacon cream sauce.
Ingredients
  • Grit cake:
  • 3 cups water
  • 1 cup stone ground hominy grits
  • 1/4 tsp salt
  • Crab cake:
  • 1 pound crab meat
  • 1 egg
  • <span class=”mceItemHidden” data-mce-bogus=”1″>1/4 cup <span class=”hiddenSpellError” pre=”cup ” data-mce-bogus=”1″>panko</span> bread crumbs</span>
  • 1/4 cup mayonnaise
  • 1/4 cup finely diced bell pepper
  • 1/4 cup finely diced red pepper
  • 3 finely chopped green onions (white and green parts)
  • 1 tsp Worcestershire sauce
  • 1 tsp dry mustard
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • dash of cayenne pepper
  • 1/2 lemon juiced
Instructions
GRIT CAKE:
  1. <span class=”mceItemHidden” data-mce-bogus=”1″>Prep: In a Medium sauce pan bring water to a rapid boil add salt and grits. Reduce heat cover and simmer for approximately <span class=”hiddenSpellError” pre=”approximately ” data-mce-bogus=”1″>20minutes</span> or until all water is absorbed and grits are a thick consistency. Pour grits onto a sheet pan in a smooth even layer and place into the refrigerator. Once cooled, use a cookie cutter to cut desired size.</span>
  2. <span class=”mceItemHidden” data-mce-bogus=”1″>Cook: dredge cake in <span class=”hiddenGrammarError” pre=”in ” data-mce-bogus=”1″>all purpose</span> flour, submerge in egg milk wash, coat with <span class=”hiddenSpellError” pre=”with ” data-mce-bogus=”1″>panko</span> style bread crumbs, and place into a deep fryer set at 350 degrees for 5 minutes or until golden brown and floating. If using a fry pan or skillet cook 5 minutes per side.</span>
CRAB CAKE:
  1. Prep: In a large mixing bowl combine all ingredients and mix. Form into patties of equal size of your grit cakes.
  2. <span class=”mceItemHidden” data-mce-bogus=”1″>Cook: Dust crab cakes with <span class=”hiddenGrammarError” pre=”with ” data-mce-bogus=”1″>all purpose</span> flour and place into a deep fryer set at 325 degrees for 5 minutes or until golden brown and floating. If using a fry pan or skillet cook 5 minutes per side.</span>
Sauce:
  1. • 1 pint heavy cream
  2. • 1 cup shredded gouda cheese
  3. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> finely diced bell pepper</span>
  4. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> finely diced red pepper</span>
  5. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> finely diced green onion</span>
  6. • 1 clove of garlic diced
  7. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> Old Bay</span>
  8. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> blackening seasoning</span>
  9. • 1/4 cup crumbled bacon
  10. <span class=”mceItemHidden” data-mce-bogus=”1″>• <span class=”hiddenSpellError” pre=”” data-mce-bogus=”1″>1tbs</span> butter</span>
  11. Cook: In a medium to large fry pan or skillet add butter, onion, peppers, garlic, and sauté until tender. Add cream and simmer to reduce. Add Gouda and simmer until melted. Add bacon, Old Bay, and blackening seasoning. Once the sauce starts to thicken remove from heat.
Presentation:
  1. • 1 Lemon
  2. • 1 bunch Parsley
  3. • 1/4 cup Mozzarella cheese
Plating: Take a spoonful of sauce and place it in the middle of your plate, place grit cake on the sauce and top it with your crab cake, drizzle more sauce over the crab cake and top with mozzarella cheese. Finish your dish off with a sprig of parsley and a slice of lemon.
