Recipe: Rosemary Goat Cheese & Cranberry Chicken Thighs

Rosemary Goat Cheese & Cranberry Chicken Thighs

  • 4 Chicken Thighs
  • 2 Tbsp Cranberry Relish
  • 3 Tbsp Crumbled Goat Cheese
  • 1/2 tsp Crushed Garlic
  • Dash of Nutmeg
  • 1 Tbsp Butter
  • 1/4 C White Wine
  • 3 Sprigs of Rosemary
  • Salt & Pepper to Taste
  1. Pre-heat oven to 400.
  2. Pat the skin of the thighs dry with a paper towel.
  3. Sprinkle lightly with salt.
  4. Combine goat cheese, garlic, cranberry relish and rosemary in a small bowl.
  5. Spoon mixture between chicken thigh and skin.
  6. Dot butter in the pan and pour in wine.
  7. Dust with cracked black pepper.
  8. Bake for about 30-35 min.
  9. Broil for a few minutes if skin doesn’t brown.
