It’s surf and turf in a flaky crust!
  • Beef Tenderloin Steaks 5 oz. 4 each
  • FF Seasoning 1 pkg.
  • Puff Pastry 1 pkg.
  • Butter 4 Tbsp. divided
  • Canola oil 2 Tbsp. divided
  • Lump Crabmeat 1 lb.
  • Egg 1 each
  • Mayonnaise 2 Tbsp.
  • Old Bay Seasoning 1 Tbsp.
  • Thick Cut Bacon Diced 6 strips
  • Shallots chopped 2 Tbsp.
  • Garlic chopped 2 tbsp.
  • Butter 1 Tbsp.
  • Mushrooms chopped 8 oz.
  • Wine 1 oz.
  • Boursin Cream Cheese 3 oz.
  • Panko Bread Crumbs 3 Tbsp.
  • Salt and pepper to taste
  • Egg + 1 tsp. 1 each beaten
  • Fried Leeks for garnish.
  1. Make Crab Cakes – Combine 1 Egg, 2 Tbsp. Mayonnaise, 1 Tbsp. Old Bay Seasoning, 1 Tbsp. Panko Bread Crumbs…Mixing well, then gently fold in 1 # Crab Meat, divide and form cakes.
  2. Cook in pan with Butter and Olive Oil, until browned.
  3. Sear the Beef – Split steaks so they are about 1” thick, season with FF seasoning, and sear on each side for about 1 minute.
  4. Make Mushroom Filling – In hot fry pan, add Chopped Bacon, once crisp add Garlic, Shallots cook for about 1 minute, add chopped Mushrooms cook until limp, deglaze with Wine, then add Boursin Cream Cheese mix well, then Panko to tighten.
  5. Build The Wellington – Take a defrosted sheet of Puff Pastry, cut it in half, on one half put 2 Tbsp. of the Mushroom Mixture, top with on piece of Beef, then 2 Tbsp. Mushroom Mixture, piece of Beef, top with Crab Cake. Next pull sides of puff pastry up sides and gather at top, seal with egg wash.
  6. Bake in Oven at 400°F – for about 20 minutes until golden brown. Remove from oven and allow to rest for 5 minutes before serving.
