Irish Cheddar Rarebit Stack

A great recipe to add to your Saint Patrick’s Day festivities.
Ingredients
- Rarebit Sauce
- 1 Tbsp. Butter
- 1 Tbsp. Flour
- 1 Cup Guinness Stout
- 1 Cup Heavy Cream
- 1 tsp. Dry Mustard
- 1 tsp. Hot sauce
- 1 tsp. Worcestershire Sauce
- 3 Cups Shredded Irish Cheddar
- 1 Cup Crumbled Stilton
- To taste Salt and Fresh grated Black Pepper
- Stack
- 4 thick slices Rye Bread – Buttered and Griddled
- 8 slices Tomatoes quickly seared
- 2 cups Arugula quickly seared
- 8 slices Thick slices Corned Beef- Griddled
- 1 cup Fresh Cooked Bacon- Chopped
- 4 eggs Pan fried.
- Chopped Chives for Garnish.
Instructions
- To Make Sauce:
- ) In a medium saucepan over low heat, melt the butter and whisk in the flour. Cook, whisking constantly for 2 to 3 minutes, being careful not to brown the flour.
- ) Whisk in mustard, Worcestershire sauce, Hot sauce, salt, and pepper until smooth.
- ) Add beer and whisk to combine.
- ) Pour in cream and whisk until well combined and smooth. Gradually add cheeses, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes
- ) Remove from heat and keep close.
- To Build Stack:
- ) Butter Thick Slices of Rye Bread with Irish Butter and griddle.
- ) Salt and pepper Tomato Slices and griddle – place in top of Rye Bread.
- ) Sear Arugula quickly in pan, place on top of tomatoes.
- ) Griddle Corned Beef and place on top of Arugula.
- ) Top with Rarebit Sauce.
- ) Top with Bacon Bits
- ) Top with Fried Egg
