NY Strip Steaks with Shrimp Scampi Butter Sauce

  • 4 Wild Harvest GFO NY Strip Steaks
  • 2 Tbsp Farm Fresh Grill Seasoning
  • 2 Tbsp Olive Oil
  • 8 oz. Pancetta Bacon (diced)
  • 1 lb Shrimp 21-25ct (peeled and cleaned)
  • 2 Tbsp Chopped Garlic
  • 1 tsp Thyme Leaves
  • ½ tsp Red Pepper Flakes
  • ½ cup Sherry Wine
  • Salt to taste
  • Black Pepper to taste
  • 1 stick Unsalted Butter (sliced)
  • ¼ cup Chopped Parsley
  1. Heat a sauté pan and add the Olive Oil, heat until hot but not smoking.
  2. Season NY Strip Steaks and sear in pan browning on both sides, about 2 minutes in each side.
  3. Place steaks in oven at 350°F to finish cooking. 5-10 minutes depending upon the doneness you prefer.
  4. In same pan you cooked the steaks, heat up and add chopped Pancetta, cook until crispy.
  5. Add Chopped Shallots and Garlic, cook for about 2 minutes, then add Shrimp.
  6. Cook for about another 2 minutes turn the shrimp and cook on other side for another minute.
  7. Immediately add the Red Pepper Flakes, Thyme and Salt and Pepper, sauté for about 1 minute.
  8. Add the Sherry wine to deglaze and move the Shrimp around the pan, allow the Wine to reduce by about half.
  9. Remove from heat and add the Butter a few pieces at a time while moving the Shrimp, forming the sauce.
  10. Adjust seasonings with Salt and Black Pepper
  11. Once all of the Butter is incorporated add the chopped Parsley.
  12. To serve place steak on plate and add spoon the shrimp and butter over the steaks.
  13. Garnish with Chopped Parsley.
