Oktober Stuffed Pork Loin Chops

  • Wild Harvest Pork Loin Chops 4 each
  • Salt and Pepper sprinkle
  • Bacon 8 strips
  • Canola oil 2 Tbsp
  • Bratwurst (cooked) 3 Links
  • Onions diced ½ cup
  • Dried Apricots chopped ½ cup
  • Dried Cranberries ½ cup
  • Apple Sauce ½ cup
  • Ground Sage 1 tsp.
  • Thyme leaves 1 tsp.
  • Black Pepper ½ tsp
  • Beer (your choice) 1 cup
  • Seasoned Panko Breadcrumbs ½ cup
  1. Cut a pocket into side of Pork Chop.
  2. Preheat oven to 350ºF.
  3. Combine the apricots, cranberries and Beer and allow to the fruit to soften for about 15-20 minutes.
  4. Heat a large sauce pan, add canola oil and Bratwurst cook thoroughly, add onions, cook until clear and soften, add the fruit and beer mixture to deglaze, add the apple sauce and herbs and mix well together, add breadcrumbs to thicken to a pliable state, remove from heat and allow to cool to slightly.
  5. Season the pork with salt and pepper, then stuff each Pork chop pocket with stuffing.
  6. Wrap each pork chop with 2 pieces of bacon.
  7. In pan sear the bacon covered Pork Chops, starting with the seam side down, browning each side evenly.
  8. Place browned Pork Chops in heated oven for 15 – 20 minutes, check temperature of roast internal temperature needs to reach 155ºF.
  9. Allow chops to rest for about 10 minutes before slicing.
