Ingredients
  • Wild Harvest® Angus Beef Shoulder Roast 3 lbs.
  • Salt 1 tsp
  • Black Pepper 1 tsp.
  • Canola Oil 2 Tbs.
  • Yellow Onion Diced 1 medium
  • Chopped Garlic 3 cloves
  • Dark Beer 12 oz.
  • Beef Stock 12 oz.
  • Tomato Puree 1 Cup
  • Brown Sugar 2 Tbs.
  • Red Wine Vinegar 2 Tbs.
  • Worcestershire Sauce 2 Tbs.
  • Caraway Seeds 1 Tbs.
  • Sauerkraut 28 oz.
  • Diced Apple 1 Cup
  • Sour Cream ½ Cup
Instructions
  1. ) Preheat oven to 350°F.
  2. ) Season Beef Shoulder Roast with Salt and Pepper.
  3. ) In fry pan or Dutch Oven, heat oil and brown steak on both sides.
  4. ) Add yellow onion, garlic, cook until onion softens.
  5. ) In bowl combine the Beer, Beef Stock, Tomato Puree, Brown Sugar, Red Wine Vinegar, Worcestershire Sauce and Caraway Seeds, mix well, then pour over the beef and onions.
  6. ) Add the Sauerkraut – then if in Dutch oven cover and place into oven for 1 ½ hrs.
  7. ) If in fry pan, transfer to casserole dish seal with foil and place into oven for 1 ½ hrs.
  8. ) Cook until fork tender, remove from oven and transfer beef to serving platter and slice beef into ½ “ slices.
  9. ) Mix the sour cream and apples with the sauerkraut and onions mixture.
  10. ) Pour over beef.
