Recipe: Layered Pumpkin Spice Cheesecake

There’s absolutely nothing “basic” about this dessert. With the combination of a buttery crunchy crust, tart cheesecake flavor and the season’s favorite pumpkin spices- who wouldn’t want to put on their favorite flannel shirt, pour some apple cider and take a bite into this treat? This is a great dessert to make for entertaining or for small groups- simply make a larger portion as a trifle or smaller as dessert shooters. Either way, this dessert is sure to please the palate of any pumpkin lover!

Layered Pumpkin Spice Cheesecake

Serves: 6-8 Servings
  • For the Crust:
  • 1 C Flour
  • ½ C Butter [softened]
  • ½ C Walnuts [chopped]
  • For the Cheesecake Filling:
  • 8 oz. Cream Cheese [softened]
  • 1 C Powder Sugar
  • 1 C Whipping Cream Topping
  • For the Pumpkin Spice Filling:
  • 8 oz. Pumpkin Purée
  • 1 C Milk
  • 1 Small Package of Vanilla Pudding Mix
  • 1 tsp Cinnamon
  • ⅛ tsp Nutmeg
  • ⅛ tsp Cloves
  • Dash of Powdered Ginger
  • Topping:
  • ½ C Walnuts
  • Dusting of Cinnamon
  1. Pre-heat oven to 350.
  2. In a mixing bowl, combine chopped walnuts, flour and butter.
  3. Using a fork, cut into the crust mixture until combined well.
  4. Press into an 8×8 square or round pan.
  5. Bake 20 min. in oven until edges brown and let cool.
  6. Mix pumpkin puree, milk, pudding mix and spices.
  7. Mix cream cheese, sugar and whipped cream with a hand or stand mixer.
  8. Layer pumpkin filling on top of crust, followed by cream cheese filling.
  9. Top with remainder of whipped cream topping, let cool in fridge for at least 30 min.
  10. Garnish with chopped walnuts and cinnamon.
