Ingredients
  • 1 pound of sea scallops, rinsed and patted dry
  • salt and pepper
  • 2 tablespoons of Olive Oil
  • 4 tablespoons of Honey
  • 1 tablespoon of Texas Pete
  • Sliced squash
  • Smoked salmon
  • Hemp hearts
Instructions
For scallops:
  1. Heat the olive oil in a large pan over medium high heat
  2. Salt and pepper both sides of scallops and place them in a pan
  3. Sear the scallops for 1-1 1/2 minutes on each side, flipping only once
  4. Remove from pan and serve immediately
  5. For quinoa:
  6. Wash quinoa in cold water
  7. Add 1 cup of quinoa to 1 1/4 cup of boiling water
  8. Cover and reduvce heat and simmer for 12 minutes
  9. Let stand for 5 minutes and fluff with fork before serving
  10. Spicy honey sauce:
  11. Mix honey and Texas Pete together
  12. Roasted squash:
  13. Preheat oven to 450
  14. Rub olive oil on sliced squash
  15. Add salt and pepper
  16. Roast squash on a baking sheet for 5-10 minutes
  17. Check after 5 minutes to see if brown, then go to every 2 minutes to avoid burning
  18. Garnish plate with salmon and hemp hearts
